Bleu D'Auvergne is a French blue cheese, named for its place of origin in the Auvergne region of south-central France. It is still made on mountain farms today and is a light, creamy, delicious cheese. It has a very pale paste with a sharply defined dark blue veining throughout the body. The cheese is ripened in cool cellars for two months, then it is wrapped in foil to mature slowly for another month or so. Goes extreamly well with bread and fruit. Not suitable for vegetarians and is pasteurised.
