Comte is a hard-pressed cooked cheese with a smooth, golden paste. It has a brown, tough, brushed rind and is stronger than Emmental with its rich fruitier flavour. Its taste is also slightly sweet, along with its texture being flexible and relativley hard, this cheese is matured for over 2 months. Unpasteurised and not suitable for vegetarians.
