Established in 1984 Cashel Blue was developed at a time when softer blue cheeses were a rarity in the English speaking world, Cashel Blue truly set the trend as an alternative to the traditional and stronger Blue Stilton. This cheese is a semi-soft Irish blue cheese which is slightly salty in flavour, with a creamy texture. Made from cow's milk, Cashel is full of character but is not powerfully strong, this cheese boasts more of a medium strength.
