Caerphilly is a hard, white cheese that originates in the area around the town of Caerphilly in South Wales. Made from cow's milk, this is a crumbly cheese with a medium to strong strength and a pleasent, slightly sour tang. Many years ago, this cheese was a firm favourite with mining communities as its tough coat made it easy to eat with dirty hands! Not suitable for vegetarians and is unpasteurised.
