This Cheese Wedding Cake incorporates the following cheeses:
(bottom tier upwards)
Gorwydd Caerphilly - This cheese originates from Wales and is made from unpasteurised cows’ milk and animal rennet. It is matured for two months at closely monitored temperature and humidity levels. The result being a subtle, well-rounded, semi-soft cheese with a fresh, lemony flavour.
Cheviot - Cheviot is one of our local Northumberland cheeses made on the Blagdon Cheese Farm. It is a hard pressed cheese that is matured for up to 9 months resulting in a sensationally smooth and moist buttery taste.
Blue Wensleydale - This is a delicately flavoured creamy blue cheese. Blue Wensleydale is frimer than Stilton and has a mellow yet full flavour taste, which is appealing to newcomers of blue cheese.
Brinkburn - Another local Northumberland cheese which is as extravagant as goats' cheese can get. This is a mould-ripened cheese which is velvety soft on the palate, light-textured and pleasingly refined with a delicate edge to lengthen and liven things up. This international prize-winner is queen of the cheeses.
