This wedding cheese cake incorporates the following cheeses:
(bottom tier upwards)
2 X Neufchatel Heart - This brie heart-shaped cheese is very soft and creamy, unlike other soft-white-rinded cheeses, it has a grainy texture. This cows milk cheese that originates from Normandy is very easy to love and is a perfect addition to top of a celebration cheese cake.
(bottom tier) Half of Thomas Hoe Traditional Red Leicester - This is a traditional homemade Red Leicester which is matured for 5-6 months to give it an extra smooth texture. It has a slightly sweet, mellow nutty flavour, which leaves an almost fruity after taste. A great addition to any cheese board or cake.
(bottom tier) Half of Cornish Yarg - An award winning cheddar wrapped in nettles, giving it a very unique and eyecatching finish. A genuinally Artisan British cheese which is fresh and creamy under its natural rind and slightly crumbly in the core.
(first tier) Half of Northumberland Nettles - This is one of our local Northumbrian cheeses made on the Blagdon estate. It is a very smooth, creamy cheddar which is not too strong, this making it appealing for a wide range of palates. Nettle cheese is made with real herbs and nettles, that dont sting! Very popular among children.
(first tier) Half of Northumberland Smoked - Another one of our local cheeses. This is a very creamy, mild, smoked cheddar cheese which holds a smooth, long lasting finish, a perfect balance between cheddar cheese and smoked cheese. Due to its mild taste, it is also very popular with all ages.
(second tier) Cashel Blue - A semi-soft Irish blue cheese, which is slightly salty with a creamy texture, made from cows milk.
(last tier) Elsdon Goats - Another local Northumberland cheese. Elsdon is a very traditional goats cheese with a firm texture, pleasant tang and a refreshingly clean finish.
